How to Make Delicious Sweet Bread with a Bread Machine

Sweet and Soft dough which can be used as rolls or a loaf. The next time I will make a braided bread with this recipe.



I have tried and tested this recipe. It does call for Pineapple Juice but there is not enough pineapple flavor to actually call them Hawaiian Sweet Rolls. I am going to play around with the recipe to see if I can make them taste more like Hawaiian Sweet Rolls. But, if you want a delicious, soft, mouthwatering roll this recipe does not fail.

I do not have a good history with any type of bread which calls for yeast. I couldn't even get the frozen yeast rolls to turn out properly. I thought I had been cursed by the bread gods. John bought me a bread machine because I wanted to finally make good bread. The first loaf didn't turn out. The second loaf did not turn out. The third loaf did not turn out. After finding this recipe and my 6th attempt to make bread I finally did it!!!


Bread Machine Sweet Rolls


Ingredients


  • ½ cup pineapple juice (or water or milk)

  • ½ cup mashed potatoes

  • 2 Tbsp non fat dried milk powder (if you used milk instead of pineapple juice then leave the milk powder out)

  • 1 large egg

  • 1 egg yolk

  • 3 Tbsp sugar

  • 1/3 cup heavy cream

  • ¼ cup butter-chopped

  • 1 Tbsp honey

  • 1 tsp salt

  • ¼ tsp ground ginger

  • ½ tsp vanilla extract

  • 3 cups unbleached all-purpose flour

  • 2 tsp bread machine yeast

Glaze

  • 1 egg yolk

  • 1 Tbsp milk

Directions

  1. Combine all of the dough ingredients into the bread machine pan in the order given. Select the DOUGH cycle and push the START button.

  2. Open the lid after a minute and check to ensure the paddle(s) are engaged and working correctly. The dough should start to clump. If the dough looks like pancake batter or is dry and crumbly, you may have inadvertently mismeasured an ingredient. Add flour, one tablespoon at a time, if the dough is too wet, or liquid if the dough is too dry.

  3. Recheck your dough again after 15 minutes. The dough should stick to the sides, then pull away cleanly.

  4. When the dough cycle completes and the dough has risen to double, remove dough from the bread machine to a floured surface.

Shaping the dough for rolls:

  1. Spray an 11x15 pan with Baker's Joy.

  2. Form dough into a large ball. Divide in half. Divide each half into 10 portions and form each portion into a ball.

  3. Place the balls in the pan. Cover pan with a tea towel and find a warm place for the rolls to rise again to double their size.

  4. Preheat the oven to 375º.

Glaze:

  1. Whisk egg yolk and milk together in a small bowl. Use a silicone brush to carefully coat unbaked rolls. Do not let it drip.

Baking Rolls

  1. Place rack in a low position in your oven. Bake rolls at 375º for 13-15 minutes or until golden brown. You don't want them to be doughy, but if you bake them too long, they will be dry and lose the soft texture you expect with sweet rolls.

  2. After cooling for an hour or two, place rolls in a plastic bag to keep the crust off.


See how buttery and soft they turned out? You can serve them with dinner, make sandwiches, make sliders or just eat them as a snack. They are that delicious.
