Healthy Twist on Traditional Mashed Potatoes: Cauliflower Faux Mashed Potatoes

I have never had this nor have I ever tried to make this. I confess I am a potato lover so this recipe would have to meet high expectations for me to like it. I was hesitant to take a bite once they were done. My first bite? Delicious! And every bite afterwards.

This recipe is a must try. Don't tell the family you used cauliflower and they will not know the difference. My husband, John, asked me all day if I was still going to make fake mashed potatoes. He was not looking forward to it. By asking that question he was hoping I would change my mind. Well, he tried it and he said it was good. He still wants "real" mashed potatoes though.

Cauliflower Faux Mashed "Potatoes"


Ingredients


  • 1 can (14.5 ounce) chicken broth

  • 2 medium heads cauliflower cut in 2 inch chunks (I took a short cut and bought it already chopped up)

  • 1 small onion chopped

  • 6 cloves garlic, whole

  • 2 Tbsp butter

  • Salt and Pepper, to taste

Directions


  1. Combine chicken broth, cauliflower, onion and garlic in a dutch oven. Bring to boil.

  2. Reduce heat, cover with the lid slightly ajar and simmer stirring occasionally until cauliflower is soft, breaking up the cauliflower as it cooks.

  3. When the cauliflower is tender, remove the cover and boil for approximately 5 minutes to reduce the amount of liquid.

  4. Drain any excess liquid.

  5. Add butter and salt and pepper to taste.

  6. Puree with an immersion blender until smooth.


Serve and enjoy. I hope your family enjoys this dish. This dish is also good for diabetics who are craving "mashed potatoes".
