This is a perfect casserole for St Patrick's Day or if you crave it sometimes like I do then any day can be celebrated with this easy dish.
A lady who came to our church used to make this a lot for the Pot-Lucks we would have after church. I don't know if they are still called "Pot-Lucks" or if there is a fancier name now but we still call them Pot-Lucks. All the people in the church bring dishes they like to make and everyone gets to enjoy them. This casserole was requested many times. I believe it is because it is not a "normal" southern casserole. I believe it is more of a Mid-West recipe. It doesn't matter where it came from because it is delicious.
Will you please bring the corned beef casserole? - Many people in the church
You will be surprised by how easy this casserole is. Easy never takes away from flavor. The recipe calls for the canned corned beef and that is what I would recommend using.
Corned Beef Casserole
Ingredients
8 oz pkg of egg noodles - cooked
1 can cream of chicken soup - I use low sodium or no salt
1 soup can of milk - no one says that anymore so you can tell the recipe has been handed down
1 lg can evaporated milk
1 can corned beef - cut up and crumbled
1/2 cup cheddar cheese - shredded
1 small onion - diced
2 cups Corn Flakes - crushed
Directions
Mix together all ingredients except 1 cup of the corn flakes
Place into a greased casserole dish
Put 1 cup of corn flakes on top then dot with butter
Bake at 350º until done - about one hour.
Serve
You can use a 9x13 inch casserole dish or you can put it in two smaller pans and cook one for now and freeze the other for later.
