This is a simple southern dish my Grandma used to make. It is simple to prepare and your family will love it.
My Grandma would fix this a lot when I was growing up. This is the only way I would eat peas. I love this dish not only because it brings back memories but because it is delicious. She would use New Potatoes and Peas from her garden. I do this in the summer also but today I only had potatoes from the grocery store and frozen peas.
Creamed Peas and Potatoes
Ingredients
4 or 5 Yukon Gold Potatoes - cut up to about one inch cubes
1 cup or so of frozen peas
1 Tbsp Butter
1 Tbsp flour
1 cup of milk
Salt
Pepper
Directions
Bring salted water to a boil. Add cut up potatoes and cook until softened like for potato salad.
When potatoes are done add the frozen peas. Cook for about a minute or two.
Drain the potatoes and peas.
In the now empty sauce pan melt butter. Once the butter is melted whisk the flour in and cook for about 3 minutes. Once the flour taste has been cooked out add salt and pepper then whisk in the milk.
Whisk until the mixture is smooth and has thickened.
Once thickened add the peas and potatoes to the mixture and stir.
Salt and Pepper to taste.
You can prepare this as a side dish or as an entree. I have been known to just cook this and put it in a bowl and that would be my supper.
