This Macaroni and Cheese is the best recipe I have found. It is creamy and the spices take it to the next level. At the Thanksgiving table this was the first dish to disappear. You will not regret making this. This Thanksgiving I mostly used my Instant Pot and Air Fryer for the dishes. No shame in that. It makes it easy. So get that Instant Pot out and start using it more. I did not measure the spices. I put the quantities I thought would taste the best. This makes about 8 servings.
Ingredients :
16 oz box of dried elbow pasta
2 cups Reduced Sodium Chicken Broth
2 cups of water
2 Tbsp butter
1 tsp hot sauce
1/2 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp smoked paprika
1/4 tsp dried mustard powder (very important ingredient)
1/4 tsp onion powder
2 1/2 cups shredded cheddar cheese
1 cup shredded colby jack cheese
1/2 - 1 cup heavy cream
Instructions
Step One
Add the dried pasta, chicken broth, water, butter, hot sauce, salt, garlic powder, pepper, smoked paprika, dried mustard, and onion powder to the liner of the Instant Pot. Use a wooden spoon to gently press down to make sure all pasta is submerged in the liquid. Don't stir.
Step Two
Secure Instant Pot lid making sure the valve is set to "sealing" Press the Pressure Cook button and set the timer for 4 minutes.
Step Three
Once the timer beeps let out the pressure carefully by moving the valve to "venting" to perform a quick release. This recipe is very starchy so I set a damp paper towel loosley over the vent to prevent any kitchen messes.
Step Four
When the pin drops remove the lid and set it aside. Turn off the Instant Pot. There will be some water left in the Instant Pot with the noodles. This is okay. Please do not drain. This will add to the creaminess of the Macaroni and Cheese.
Step Five
Add 1/2 cup of heavy cream and stir. Add in the cheeses a handful or so at a time, stirring after each addition. Keep stirring until they have completely melted into a creamy sauce. If the Macaroni and Cheese is not creamy enough add a little bit of heavy cream at a time until desired creaminess. As the Macaroni and Cheese sits the cheese sauce will thicken. Keep this in mind when adding cream.
Step Six
Taste and adjust seasoning if necessary. Put in a bowl or casserole dish to serve.

This recipe was requested by the young woman from Lebanon who joined us for her first Thanksgiving. She has only been in the United States for three months and honored us with her presence at our supper table. She is such a delight and we were truly blessed to have her with us.
