This pork casserole can be used with any leftover meat. It is filled with egg noodles, diced pork, veggies and cheese. An easy casserole recipe that everyone is sure to enjoy.
I had some smoked pork loin leftover and I did not want it to go to waste so I made this casserole. It is a keeper for sure.

Pork Casserole
Ingredients
12 ounces egg noodles (or however many you have)
3 cups of leftover pork tenderloin, diced (may substitute any leftover meat)
2 cans cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup frozen peas
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp ground black pepper
Directions
Cook the egg noodles according to package directions. Once cooked, drain off the water.
Preheat the oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray.
In a large bowl stir together cream of mushroom soup, sour cream, peas, cooked pork, cheese, garlic powder, salt and pepper.
Stir in the cooked egg noodles. Pour the mixture into the prepared baking dish.
Cover the dish with foil and back for 30 minutes.
Serve this up to your family and they will enjoy it and it only took 35 minutes. Great for a weeknight when you have leftovers from the weekend.
