This is a great soup which is made with hot or sweet Italian sausage and even breakfast sausage if you don't have the other. It also has potatoes and vegetables.
I was craving soup so I started looking in my pantry and fridge. I love putting great ingredients together to see what I can come up with. My philosophy: Add good food together and you can't go wrong. Make sure the ingredients make sense though. What do you like? What flavors do you want? What do you have on hand? Go from there.

Ingredients
Seasonings:
1 tsp dried basil
½ tsp dried parsley
½ tsp dried oregano
½ tsp mustard powder
¼tsp pepper
Soup
1 lb ground Italian or breakfast sausage
2 Tbsp butter
1 yellow onion - diced
½ cup carrots - diced
2 ribs celery - diced
3 cloves garlic - minced
3 Tbsp flour
1 tsp soy sauce
1 tsp hot sauce
5 cups chicken broth
1 cup heavy cream
1 ¼ lbs red potatoes - about 6 small potatoes
2 cups cheddar cheese - shredded (optional)

Cook the sausage: Remove the casings from the sausage if you purchased links. Preheat a large dutch oven over medium heat. Add the sausage: cook and crumble to break it apart. Once cooked halfway through, cover partially and continue to heat, stirring occasionally, until fully cooked through. It will take around 10-12 minutes total. Drain and reserve 1 Tbsp drippings. Put sausage on plate for later.
Add the drippings to the pot along with 2 Tbsp butter over medium heat. Add the diced onions, celery and carrots and cook for 5 minutes or until soft. Add the garlic and cook for 1 minute.
Add the flour and cook for 2 minutes to get the flour taste out. Add the chicken broth in splashes and use a wooden spoon to get all that delicious flavor off the bottom of the pot. Slowly stir in the heavy cream, hot sauce, soy sauce and seasonings.
Bring to a boil, then reduce to a simmer. Clean the potatoes and pat them dry. Cut into 1-inch cubes and add them to the soup. Simmer, uncovered, until the potatoes are fork tender, about 20-25 minutes. Add the sausage and stir to combine.
Reduce heat to low and stir in the cheddar cheese. (optional)
Garnish with red pepper flakes and parsley. Serve!
